Amazing Corn Fritters
There was once a time that I believed that all fried chicken joints were the same. That they all offered the same sides, all tasted the same, and that nothing really made any of these chicken restaurants stand out. These Simply Amazing Corn Fritters I stumbled across in Calgary while I was living there many moons ago literally changed my entire opinion on what it was that makes a “Chicken Joint” stand out. Calgary was all about the cowboy, the stampede, the hearty gravy filled meals and alas, these Amazing Corn Fritters made at the most unlikely of spots (or so I thought).
Trust me when I say that not all “Chicken Joints” are the same. I’ll call out this restaurant and tell you this. Not only is their chicken second to none, the Amazing Corn Fritters these guys create are simply irresistible and I had the pleasure not only to eat thousands of these, I also learned first hand how to make them. I’m not talking about making a few dozen, I mean these Amazing Corn Fritters were so incredible that I would personally be making at least 3ooo a week. I kid you not. A family owned restaurant with a tight knit crew knew how to raise the bar on so called “Chicken Joints” and to this day, I haven’t found anything that compares. Along with the 2000 pounds of potatoes that were peeled and french fried up every week, these Amazing Corn Fritters took a solid first place as a staple side for their fried chicken that was out of this world on it’s own.
I was never supposed to learn how to, nor even consider making these corn fritters if it hadn’t have been for a prolonged illness form their main cook. I was literally cooking there while in between construction jobs. Oh how lucky I was to be part of one hell of a spectacular family owned business that ensured the best of the best for quality and flavour. I told you I’d call out this “Chicken Joint” so here goes, the place is called Chicken On The Way. Opened in 1956, passed on from parent to son and so on, one thing is for certain. They found the perfect side for an already phenomenal fried chicken that was served smothered in a rich and creamy chicken gravy that left many more than myself begging for just a little drip more. Yep, Corn Fritters. I never would have believed it either until I had to make them. Industrial sized mixer, two cases of corn, the list goes on and on I tell ya. But the fact that these donut hole looking delicacies were as popular a side as even the french fries which we can all agree that is a natural marriage, blew this guy away. Let’s make some Amazing Corn Fritters shall we?
Corn Fritter Must Haves:
- 1 can creamed corn
- 1 tsp cayenne pepper
- 1 tsp salt
- 2 eggs beaten
- 2 1/2 cups all purpose flour
- 1 tbsp baking powder
- 3/4 cup buttermilk (feel free to use regular milk)
- 2 1/2 tbsp butter (real butter, no margarine)
- oil for frying
Corn Fritter Fryin’:
- Combine all your ingredients in a large mixing bowl until a thick pancake like batter forms. Set aside
- heat 2-3″ veggie oil in a deep sided large sauce pan to 360.
- Using a spoon or small cookie scoop, carefully add your fritters to the oil. Careful not to add too many as they will stick to each other.
- cook about 3 minutes and flip carefully and continue frying for another 3 mins until the fritters are a deep golden colour.
- Carefully remove from oil using a slotted spoon and let drain for a minute or two.
- Serve immediately or gently reheat in the oven for 10-15 mins before serving.
So we all know the deal with any fried food right? It’s always best to serve and eat immediately right? These Amazing Corn Fritters do quite well after being reheated in the oven. By all means serve these bad boys up with a healthy dose of some deliciously creamy gravy or try out the sweeter side of your savory side and drizzle a little honey and icing sugar or even better, a touch of raspberry or strawberry jam. Trust me when I tell you, what seems extremely odd in theory, is mind blowingly tasty and you will be trying it again and again.

I modified the recipe just enough to give it a little piece of me in it, but I got to tell you, these amazing corn fritters sure do bring me back to cow town whenever I make them.
